2 bunches of Maitake Mushrooms (this is enough for 2 sandwiches), Seasoning (I used Chief Chicken Seasoning) It does not contain any animal products. Use whatever you would like to season with as long as you are generous with it!
First you should wash and dry mushrooms. Wring them out inside a paper towel carefully as they do break apart easily. The pieces that fell off I still kept and fried like nuggets. I also blotted them with a paper towel after to get as much of the access water out. I used enough seasoning to cover the mushrooms. If you watched my video (on facebook or IG) you can see they are stringy weird looking mushrooms, They are also porous so they absorb the seasoning well. Next I let the mushrooms marinate for about 2 hours but a minimum of 30 minutes. So that you get a good flavor out of them. Now on to the wet/dry batter. I used a cup of cornmeal and a half cup flour for the dry. Half cup cornmeal and and half cup flour for wet batter. Put enough water that the wet batter appears to be like pancake mix. I did not season the batter because after smelling the marinated mushrooms I knew it would be overkill. Heat the vegetable oil in the pan I used my cast iron skillet. Make sure you use enough oil to cover mushrooms to deep fry. Dip one bunch of mushroom into wet batter and cover completely then put in in dry batter and cover completely. Then place in oil. I suggest only placing two mushroom bunches in pan at a time. You will throw the heat of the oil off putting more than two in pan. Turn once while frying. Doesn’t take long just watch until they turn a golden brown. Place on paper towels to drain oil and then set your sandwich up with what ever toppings you would like. And voila! Plant based “chikin” sandwich!
