West Indian Style “Peas and Rice”!

Hi Everyone! Welcome back to my blog. Hope all is well with all of you and everyone is staying safe!

I get a lot of request for my recipe for West Indian style Peas and Rice. This recipe is so easy and the flavors are amazing and not to mention it’s plant based! Most Caribbean’s make peas and rice on Sunday to go with Curry or any West Indian dish that you prefer! Once you try this recipe out make sure to tag me and let me know what you think!

Ingredients
1 can (19oz) Kidney beans, including liquid
1 can (14 oz) Coconut milk
Water (to full rest of the liquid)
2 cloves Garlic, chopped
1 Small onion or 2 stalks scallion, chopped
1 tsp Dried thyme (or 2 dried thyme sticks)
1½ to 2 tsp Salt, to taste
1/4 tsp Black Pepper
2 cups Long grain rice (rinsed and drained)

Method
1. Drain the liquid from the can of beans into a measuring cup and
add the can of coconut milk and fill the rest water to make four cups of liquid
2. Add liquid, beans, garlic, chopped onion and thyme to large pot
3. Add salt and black pepper. Bring to a rapid boil.
4. Add rice and boil on High for 2 minutes.
5. Turn heat to Low, and cook covered until all water is absorbed (about 15 minutes) then turn heat off and let sit covered.
6. Fluff with fork before serving.
