Vegan Corn Bread

  • 2 cups yellow cornmeal
  • 1 cup all purpose white flour
  • 1/2 tbsp baking powder
  • 1 tsp salt
  • 2 cups unsweetened oatmilk
  • 2 tsp apple cider vinegar
  • 1/3 cup melted vegan butter
  • 1/4cup brown sugar
  • 1/4 cup honey (optional) I know some people do not consider honey vegan this is just as good without it.
  • Preheat oven to 350°
  • In a measuring cup, combine the apple cider vinegar and oat milk. Set aside.
  • In a bowl, add in the dry ingredients and whisk together. Next add the melted vegan butter, honey(optional) along with the apple cider vinegar and oat milk mixture. Mix together to combine.
  • Grease an 8-inch baking dish with a neutral oil or line the baking dish with parchment paper. Transfer mixture to an 8×8 baking dish and bake for 45-60 minutes or until golden brown. Insert a toothpick or pointy knife to make sure it’s done.
