- 2 cups yellow cornmeal
- 1 cup all purpose white flour
- 1/2 tbsp baking powder
- 1 tsp salt
- 2 cups unsweetened oatmilk
- 2 tsp apple cider vinegar
- 1/3 cup melted vegan butter
- 1/4cup brown sugar
- 1/4 cup honey (optional) I know some people do not consider honey vegan this is just as good without it.
- Preheat oven to 350°
- In a measuring cup, combine the apple cider vinegar and oat milk. Set aside.
- In a bowl, add in the dry ingredients and whisk together. Next add the melted vegan butter, honey(optional) along with the apple cider vinegar and oat milk mixture. Mix together to combine.
- Grease an 8-inch baking dish with a neutral oil or line the baking dish with parchment paper. Transfer mixture to an 8×8 baking dish and bake for 45-60 minutes or until golden brown. Insert a toothpick or pointy knife to make sure it’s done.
