Southern Style meatless Collard Greens

~2 pound bag of collards (washed and drained and sort out stems to) I soak mine in the sink with two table spoon of vinegar and clean in sink removing all loose dirt.

  • 1 large yellow onion, sliced
  • 1 red bell pepper diced
  • 5-6 garlic cloves, sliced or minced
  • 2cup vegetable broth plus more if needed
  • 1 Tbsp smoked paprika
  • 1/4 Tbsp red chili pepper flakes
  • 1 tsp liquid smoke
  • Low sodium soy sauce, to taste
  • Salt and Black pepper, to taste
  • Pinch of baking soda to make greens tender
  • Table spoon of vegan butter

Sautéed onion and red bell pepper with vegan butter in heavy bottom pot (Dutch oven) when soft add greens and season. Then add vegetable broth mix well. Add liquid smoke,soy sauce, and pinch of baking soda. Mix well bring to a boil turn down to low and simmer for 3 hours. Continuing to stir along the way. Taste to see if your pot needs salt and pepper before adding and the season to taste.
