This next recipe is seafood inspired! The old bay seasoning and seaweed give the sauce a fresh from the ocean taste but all plan based. This was a quick and easy recipe that everyone can enjoy! And as always ” Eat More Plants”!
Plant based Scallops
- 2-3 Oyster Mushrooms (sliced)
- Old Bay Seasoning
- 1 1/2 tablespoon of olive oi
- 8 ounce package of bow tie pasta
Cajun Sauce
- 1 (14) ounce can of diced tomato drained(plain or flavored with basil and garlic)
- 1 medium onion chopped
- 2 Scallions
- 1/2 teaspoon of dried seaweed ( more if you like the taste)
- 1 cup plant based milk (I used Planet Oat oat milk extra creamy)
- 2 tablespoons of fresh parsley ( you can use dried I would use one table spoon in this case)
- 3 cloves of garlic
- 1 1/2 tablespoon of Cajun seasoning
- 2 tablespoon nutritional yeast
- 1 slice of lemon
- 1 1/2 tablespoon of olive oil
Directions for Pan seared “vegan” scallops
Slice off the top and bottoms of the oyster mushrooms ( you can save for another recipe)
Wash mushrooms then cut mushrooms in a circle that resembles a scallop.
Next place in a bowl and add a little olive oil and old bay seasoning and mix. Make sure to coat the mushrooms with seasoning. Let this sit for about 15- 20 minutes.
Add 1 1/2 tablespoon of olive oil to pan and heat. Once heated add mushrooms to pan. Be careful not to crowd them in pan.
Cook on each side until it has a nice golden brown color and then set aside.
Cook Pasta as directed
Cajun Sauce
In the same pan add 1 tablespoon of olive oil to pan and heat
Add onion and garlic and saute about 1-2 minutes
Slowly whisk in your plant based milk whisking frequently so it does not stick one it is mixed then add your Cajun seasoning and parsley Continue to whisk.
Next add your drained can of tomatoes to the mixture and stir well.
Stir in your nutritional yeast until slightly thickened. Add salt and pepper to taste.
Add in your pan seared vegan “scallops” stir well add lemon slice and let simmer for 5 minutes make sure to stir so it does not stick to pan.
Pour sauce over pasta and Garnish with sliced scallions
